Lotus Biscoff Bakes
I’m not sure about you but bar going to the hairdressers (what’s that again?) up until a couple of years ago, Lotus Biscoff was not on my radar. However, these gorgeous biscuits are now widely available and have become a huge favourite in this household.
Not only that but you can also buy in a spread, and the options for baking with it and the biscuits, have exploded. Lotus Biscoff Brownies
These super chocolatey brownies are swirled with Biscoff Cookie Butter Spread making THE BEST brownies EVER!
- 200 g Dark Chocolate
- 200 g Unsalted Butter
- 4 Medium Eggs (or 3 large)
- 275 g Caster Sugar (white or golden)
- 90 g Plain Flour
- 35 g Cocoa Powder
- 200 g Chocolate Chips
- 150 g Lotus Biscoff Biscuits (chopped)
- 1/2-3/4 jar Biscoff Spread

Rich and full of caramel flavour, this cheesecake is perfect for a weekend treat and those Biscoff loving kids at home.
- 250 g Lotus Biscoff biscuits
- 100 g unsalted butter, melted, plus extra to grease
- 500 g cream cheese
- 100 g icing sugar
- 300 ml double cream
- 1 tsp. vanilla extract
- 150 g smooth Lotus Biscoff spread
- 50 g Biscoff biscuits

With a dough made from Biscoff cookie crumbs and stuffed with a scoop of creamy Biscoff spread …these soft and chewy cookies explode with yumminess!
- 14 Biscoff/Lotus cookies, ground into fine crumbs
- 5 1/4oz all-purpose flour
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 4oz unsalted butter
- 2oz creamy Biscoff cookie butter
- 3 1/2oz packed light brown sugar
- 2 1/2oz granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 14 tablespoons Biscoff cookie butter

- 300 g Butter Unsalted
- 300 g Sugar Light Brown
- 300 g Flour Self Raising
- 6 Eggs Large
- 1 tsp Baking Powder Heaped
- 1 tsp Vanilla Extract
Icing - 160 g Butter Unsalted
- 330 g Icing Sugar
- 1 Jar Biscoff Spread Smooth or Crunchy
- 1 Packet Biscoff Biscuits
